We quote it because of the in- formation respecting the test applied to the eres. There was a novel competion at the newspaper Birmingham pou'try show—for the best doxen of preserved eggs, that bad} tuo be seni in by the Ist of October. so that they were two months old. The time was obviously too short to aff ord wvery fatisiactory test ofany egg- presers Ing process ; but that did not rest with the Birmingham committee, | as the donor of the prizes did not offer | them at any lier period. Six moaoths would afford a very salistactory proot! of the r ~ en Vaile OF any process suy- sted, It is hardly necessary to say that the eyes were sent in to the cus-| tody of the secretary before the 1-t of | October, so that their is no doubt of | their being of the required age. The plan of testing adopted by the judges | ~M: of Birmingham, and Mr. Tezgetmeir—was to break one of exch clean saucer;they then se- lected the eight best and boiled them together in the same saucepan, putting Leeson set into a them into cold water, removing the | saucepan from the fire, whemthe water | boiled, and al‘owiog them to remain a} minute anda hail before removing them | them. from each selected | ) were boiled for teo minutes and opened when cold, that the exact size of | the nit Space could be noticed. . This, of course; varied from the amount of | moisture lost through the pores of the sheil by evaporation. Number wert light Brahma eggs that have been preserved in lime water. The samples broken was found rather cloady in the white, owing probably tocear me water being use finstead of milk of lime | Water is ooly capable of dissolving a} very small quantity of quick or caustic | lime, and om exposure tothe air this | becomes rapidly converted into carbon. | nte of lime isinert as regards any pres | servative power; but if milk of lime is} used, as fast as one part of lime is ecar- | bonized and precipitated another is | dissolved, so that the fluid always re-| mains caustic and with its preservative | action. In one the eggs had be en | rubbed with a composition congisting of solid paraffia, and im the other with a couting of oil, | Of those that were boiled and tasted | the two best that were selected by the judges were those of Miss C. F. Dolben, which had been simply packed in com- mon sait. These had not lost sensibly by evaporation, had good consistent albumeo, and they were the best tasted when boiied. There was, however, very slight difference between them and those that received the second prize. These Were crosses of various breeds, all tine large eggs. There were shown | ty Miss Rose Hubbard, who gave the icllowing as the method of preserva- vation:—Melt one part of white. wax to two parts of spermaceti, boil and mix thoroughly ; or two parts clarified suet to one of wax and two of spermaceti. Take new-laid eggs, rub with antiseptic salper fine rice starch. Wrap each exe in fine tissne paper; putting the broad end dewnwards, screw the paper tightly at the top, leaving an ineh to hold itby. Dip the egg rapidly into the fat heated to 100 degrees. With- draw and leave to cool, Pack broad end downwards in dry white sand or sawdust. The eggs so preserved su were admirable, and probably had the | contest been for a longer time would have stood first, but it is exceedingly useful to know that egys may be pre- served admirably fortwo months with no more trouble thau putting them in common salt. Miss Hubbard’s plan Was very superior in. one respect; on strippiog off the waxed paper the shel! was a* pure and clean as when. first lnid—jn fact, the eggs might have sold as being fresh. if not.as new-laid, <i Jam.
