OLD FASHIONED WAY T0
COOK CHRISTMAS TURKEY
There are many excellent ways of
cooking and stuffing the Christmas
turkey, but the one described has
the advantage of si<pl.lcity accord-
ing to time-honoured custom. When
the turkey is drawn and cleaned,
the inside B rubbed with salt and
pepper and stuffed with dressing of
the old-fashioned sort which long
experience has proven most sati-
factory. 'The recipe for this sage
and onion dressing ist-
2 cups soft bread crumbs. 2 cups
cracker crumbs, 1-2 cup melted but-
ter, .1 1-2 cups scalded milk, 2 eggs
slightly beaten, 3 onions (medium)
finely chopped, 2 teaspoons powder-
ed sage or poultry dressing, 2 tea-
spoons Worcestershire sauoe, 1
teaspoon salt, 1 teaspoon pepper
and 1-8 teaspoon celery salt,
Melt the butter in hot milk, add
the slightly beaten eggs, pour over
tho bread crumbs. Add the onions
and other seasonings. Then fill the
caviety with this dressing, and also
the cavity under the skin of the
_neck where the crop was removed.
When completed, sew up the open-
ing, taking care to draw the skin
:over th neck and tie lt.
Truss the turkey by forming the
tip of each wing back of the first
,wing joint, trangular shape, and tie
the ends of the legs to the tail.
Place the turkey in the roasting pan
so that that back rests on the pan
and the legs on the top. Dredge
_with flour. sprinkle salt and pep-
gper and place in a hot oven. When
fthe surface of the bird is well
~'browned, reduce the heat and baste
every 15 minutes until the turkey is
cooked. This will usually require
three hours, depending. of course,
on the size of the bird. For bast-
ing. melt four tablespoons of butter
or bacon fat in a half cup of boil-
ing water when this evaporates, so
as to keep a. sufficient amount for
busting, 'nn-n the bird several times
during the roasting, so that the
sides and back as well as the breast
will be browned. When it can be
easily pierced with a fork, remove
the turkey from the roasting- pau.

When garnished the turkey is ready
to present a regal repast.

nesemblance to her own and' her

pleted, she hopes to direct it herself

It was Anah-An-Eo who trans-
formed Grey Owl from a hunter of
the beaver, the natural prey of his
trapping forbears, to their greatest
champion. Descendant of full-
blooded Apaches, he was adopted
by Ojibways of Northern Ontario,
in 1908. Among them he met the
Indian maiden whose influence
gave to Canada her first “keeper
of the beaver.
Few men know the beaver as well
as Mrs. Grey Owl. With her hus-
band she spent many years roam-
ing the forests of Ontario and
Quebec. Together they made a
study of the animal adopted as
Canada's national emblem and now
threatened with extinction. Wher-
ever they found them needing
heln they turned doctor and nurj.
Their little brown furry friends
have been known to swim to their
canoe half a miie from shore and to
com: at a call from long distances
The beaver have not been as pains-,
taking as usual, however, ln the
construction of their winter quar-
ters at Adinwan Lake. Mrs Grey
Owl predicts a. short winter. a re-
assuring fact to her as she will
spend the next three months in
comparative seclusion.
TESTED RECIPES
Plain Brown ‘Sauce
Melt four tablespoonfuls butter
in saucepan; brown well. Add five
and a half tablespoonfuls flour
and continue browning, stirring
constantly. Add two cups hot brown
sto-k gradually while beating
briskly Add one-half teaspoon
salt; one-third teaspoon pepper;
bring to boiling point.
Mushroom Sauce
Melt together two tablespoons
butter. two tablespoons dripping,
and blend with four tablespoons
flour. When flour is brown, add one
teaspoon Worcestershire sauce,
one-half teaspoon salt, and two
CUPS beef stock, or edual amount of
water to which two teaspoons beef
extract has been added; boil, stir-
ring constantly for five minutes.
Add one can, or one-half pound
fresh mushrooms sufficiently in
advance of serving to heat through.
_ Bechamel Sauce
Melt a quarter cup butter in
saucepan, add one-quarter cup
flour. stir until smooth. Add gradu-
ally one and a hail’ cups of highly
sea \ `cd chicken stock while stir-
ring constantly. Add one-half cut
hot cream and beat until smooth
and glossy. Season with salt. DCP-
per, and fine grating of nutmeg. If
a yellow sauce is desired, remove
sauce from ru-uae and add the
beaten yolks of two eggs diluted
with one-quarter cup warm cream.
Do not allow sauce to boil afterad-
ding egg yolks. '
Sauce Plquant'
Make a plain brown sauce. Sifn-
mer one tablespoon each of finely-
chopped chlves, olives. mi'd red
pepper. pickles and capers in two
tablespoons vinegar for five min-
utes Add to brown sauce and
simmer 15 minutes.
Thick Whitt Sauce
Melt two and a half tablespoons
of butter in saucepan. Add five
and a half tablespoons flour mixed
with one-third teaspoon salt and
few grains pepper. Add one cup
scolded milk. stirring constantly,
Bring to boiling point and beat
until smooth and g'ossy.
