CREAM VEGETABLE SOUPS

(Basic Recipe)

4 tablespoons butter

4 tablespoon flour

2 cups milk.

2 cups water in which vege- table was cooked.

2 cups cooked vegetable. finely chopped or rubbed through sieve Onion if desired Salt and pepper w taste Melt butter and blend in flour. Add millk and vegetable water, us- ing more than 2 cups milk if ne- oessary to make 4 cups liquid. Cook until mixture thickens, stirr- lng constantly. Add strained vege- table pulp or chopped vegetables. Season to taste. A slice of onion cooked with the vegetable adds flavour to the soup. Carrot-s. cel- ery, peas. string beans. spinach. onion asparagus cauliflower. ‘to- matoes or a combination of‘ vege- tables may be

CREAM 0F TOMATO SOUP

2 cups canned tomatoes 2 slices onion. 2 teaspoons sugar 4 tablcspoo butter 4 tablespoons flour 4 cups milk Salt and pepper Method 1—Cook tonatoea. onion and sugar together" for 16 min- utes. Strain Make cream sauce of butter flour and milk. Add salt and pepper. Add strained tomatoes slowly to sauce. Serve at once. If soup has a tendency to curdle beat with dover egg beater

Method z- Melt butter. Blend in flour. Add cold tomatoes. strained. if desired. onions, sugar and milk Heat together until soup thickens, stirring constantly. Sea- son with salt and pepper. Remove onion and serve at once.

QUICK CREAM SOUP

4 tablespoons butter

4 tablespoons flour.

l quart milk

l slice onion

1 teaspoon salt

2 cups raw grated carrot or turnip.

Melt butter. Blend in flour and gradually add milk Cook stirring constantly, until mixture thickens. Add onion. salt and grated vege- table. and cook over hot water un- til vegetable is tender —about 10 minuws. Remove onion. Sprinkle chopped parsley over soup Just be- fore serving.
