In Canada there have evolved iuwo rival systems of dealing with the liquor question, viz, Prohibi- tion and Government Control. In Britain, up to the present, the sale of alcoholic beverages has been canted on under the Licens- ing System. (The whole matter is, to bhis writer. of academic in- terest only, since for very many Years he has been s total abstain- er.)

Just when the “hi. tavern was instituted it would be hard to say, Certainly before 1400, for Geoffrey Chaucer who sang o! the Tahard Inn, died in that year. But their appearance on the Eng- lish scene in any number would be after the dissolution of the Monasteries. Previous to that the religious houses took care of travellers, and even set up crosses as landmarks to guide them to their hospitable gates.

These were the halcyon days of the liquor trade, and every gen- ticlmans valet or servant saved his money with the view of end. ing his day as landlord in his own

There were clouds on the hor- izon though. The Act of i872, am- ended 1574, restricted the issue of licenses and shortened the hours for the sale of liquor. In rural districts some pubs were closed at 10 p.m., and in Newcastle at ll p.m., vnhile in London I found that "closing time" was midnight. In Newcastle pubs in industrial districts opened at 7 gm,

The Gnverrmcnt had nothing to do with the actual sale of liquor- its revenue came (l) from the sale c-f licenses. (2) more import. nntly from the licensee's income tax. and (3) most important, by taxes on the brewers and distill- ers.

It was the brcuiers who thought to recoup themselves by reinforc- ing the beer with salt (to increase thirst) and certain narcotic drugs. to increase potency. By some means a list of these deleterious substances had been secured and was read in Parliament. The Gov- ernment whose only interest in the matter was the preservation Orf the people's health, banned these drugs by heavy fines. Inspectors were then put on, who took sam- ples of beer and spirits. frcm each pub to the Public Analyst. Ilf the samrple was not. pure, or even had too much water in it. the person responsible was fined. Repeated offences, of whatever kind, led to loss o1 license. Is there any law in Canada to ensure the purity of the “beverage”!

When licenses were held by pri- vate persons the competition amongst the brewers and distill- ers was, ln general, beneficial to the drinking public. Each brewer, etc. strove to get. ahead of his rivals by supplying a better class of liquor. However, this state of affairs did not last too long; the brewers and distilfers began to buy out the private “iandlords,"

Milk will keep longer and bet- ter if it is “scnlded" delivered. It should be brought al- most to boiling point, but not al- lowed to boll, Then pcur into a clean jug and c001 rapidly by standing the jug in cold water. Or: to keep milk fresh without, heating, pour it into a clean jug and stand the jug in a bovwl of cold uYater. Then soak a piece of folded clean muslin nr flannel in cnld water. wring it out, and com- pletely mver the jug with it, making sure that. all the ends are in the water in the bowl. Stand in a cool airy place, The water evaporating frrm the cloth keeps a cool temperature round the milk jug, Rinse the cloth and renew the water daily: and never pour fresh milk into a Jug containing old milk.

As to butter and cooking fat. the process is very similar. "Put the fats on a wire grid over a bcnvl three-quarters filled with cold water, Cover with a damn cloth, the ends dipping in the water." Another plan is to put the fats in a hosin and stand this in a larger bowl partly filled with cold water. Oover with e cloth “Tum: out in cold water, letting the ends go into the water in the bowl. Renew the water and rinse out the cloth daily,

Hog production in Canada can be assured of a permanent place in Canadian agriculture because of the excellent advantage to which pigs convert grains and daby by- products to meat.

The care and attention given to the brood sows is very important in the raising of healthy. vigorous litters. Plenty of exercise, s. well balanced ration, pasture in the summer and a supply oi good clover hay in the winter constitute good practices to iollow in caring for the brood sows.

The feed mixture ior market hogs used by the Advanced Registry The Station for Swine have been found satisfactory at the Dominion Experimental Fan-n. Nappan. NS, says J. G. Crows, Fanm Assistant. These consist oi a growing ration fed from weaning until the hogs reach an average oi 100 to 110 pounds live 'weight and a fatten- ing ration fed from this weight to a market live weight of approxi- maiely 200 pounds.

The growing ration consists of B5 per cent of a basal grain mix- ture made up of 5O pounds barley 20 pounds wheat and 30 pounds oats and 15 ‘ntr cent of a protein mineral supplement which consists of 50 pounds tankage. l5 oounds vnhite fish meal, 26 pounds linseed oilmeal. 5 pounds iodized salt and 5 pounds ground limestone. ‘in thE fattening ration the basal mixture is increased to 94 per cent and the protein mineral silpplement re- duced to (l per cent. In the latter ration the precentage of barley and wheat in the above basal mix- ture are each increased by 10 per cent and the precentage of oats is reduced by 20 per cent.

In order to meet the vitamin A and D requirements for growth a high quality feeding fish nil is supplied in the growing peziod at the rate of one ounce to each four pige daily.

The pigs are fed all the meal they will clean up in 15 to 20 minutes, feeding three times daily during the first feeding period and tvrlce daily during the fatten- ing period. Water may be included with the meal at the rate af two pounds of vr-aier to one of meal. Additional fresh water should be supplied,

Even more noticeable than the increased production has been the movement oi producing areas westward from Ontario. In 1969. practically the total crop Wu grown in that province. By i885. however, the possibilities oi pro- ducing alialia seed in Western Canada were being realized. As the knowledge spread that alfalfa seed of superior quality could be a. profitable crop in certain areas of the west, production has in- creased there very considerably. while that of Ontario has declined. In 1947 over 90 per cent of the total crap was grown in Marsliobe. Saskatchewan and Alberta; Suk- otchcwan alone accounted for oven‘ five nuuion pounds.

As the result oi increased neo- ductlon in recent years Oanule has had relatively large quantities of seed available for export. Cen- adieu grown alfalfa reed has gained an excellent reputation on world markets and the United States has become a market for a good share of the sunplus seed. Exports from the i047 crop were the largest on record and amount- ed to nearly eight miulon pounds valued at about three million dollars.
