Work it in a bowl or mortar till frothy and white; thenl take 1/; lb. oi tine ilour. and 1A lb.l oi sweet butter; rub a little otthel butter into the ﬂour, and mix till; stiii with a little cold spring water; Roll the paste straight out. throw over it a little ﬂour and lay over‘ lt one-third oi the butter in thin‘ hits. Throw a little more tlollr over the butter and so do three times. Then line cheese calre tins with this. ﬂll them with mixture. dust each with sugar. and put in a, gentle oven to bake.
