Tlte process of making beer from barley is a complex procedure with three distinct steps.

The barley grains are placed in a tank containing water for two days. ilten spread out to sprout. After a few days the sprouts ap- pear, but they are not allowed to grow lest they use u the sugar. The grain is dried an the sprouts rubbed off. The dlastase has com- menced the work of converting the starch into sugar, which the brower requires. Twenty per cent, of the food value is lost at this stage, which is called melting.
