Have veal cutlets cut very thin. Pound well. Heat butter and olive oil in heavy frying pan. Add sage leaves and cosk for 5 minutes. Ifien put in cutlets and cook until tender and nicely browned on Both sides. Salt and pepper. Add lemon juice just before serving.

Turn out on hot platter and pour juice left in frying pan over the cutlets.
