Beef. pork or chicken canned in the manner described above will be found delicious, served either hot or cold. but the following method is good for serving hot: Cook an extra large roast for din- ner and make plenty of brown gravy. After dinner slice the re- maining meat into jars and cover with gravy. Allow to boll about an hour, or even several hours. This is rather a convenient meth- od, as you can wrap the jars 1n a. cloth and put them in a kettle be- tween meals. There will be not more than two sealers full, and they can easily be boiled between dinner and supper.

Wash, slice and pare a yellow turnip. Cook in boiling, salted water. Drain well and force through a potato ricer. Wash and scrape a bunch of carrots and cook in a separate kettle of boiling, salted water. Drain the carrots and force through a potato ricer. In putting each vegetable through the ricer, press gently at first to remove as much of the water as possible.

Blend 1 cup of the rlced turnip with 1 cup of the rlced carrot. Season with salt and pepper. Whip with an electric beater if possible and fold in I-2 cup of heavy cream beaten until stiff.
