This jelliod pepper relish fills such a multitude oi‘ needs as a. meat ae- companiment, that we feel that no home should be without it. Mould it in very tiny attractive little glasses, so that it may be tumed out whole for serving. _

2 cups prepared red and green Dept)?!‘ 1 1-2 cups cider vinegar 7 cups granulated sugar 1 bottle liquid pectin

Wash the red and green sweet peppers, drain thoroughly and re- move the seeds. Put the pulp through food chopper. using a tine knife. Drain pulp in a fine sieve before measuring 2 cupfuls, solidly packed.

Measure vinegar and sugar into a large kettle. Add the pepper and stir mixture over heat until it reach- es a full rolling boll. Stir constantly before and during the boiling; boil hard for 2 minutes. Remove from heat and stir in liquid pectin. Then stir and skim by turns. for 5 minutes, to cool the reltshsrghtly and thus dmouragc floating of the solids. Pour quickly into sterlizied jars and cover at once with a. t-hin film 0f
