GLAZED BEEF LOAF

A loaf that is really different- and one to enjoy either hot or cold. We would suggest baked potatoes, white or sweet. with it. and a leafy green vegetable or green beans or peas.

Yield-6 servings.

1 pound minced lean beef

1 cup coarse soft bread crumbs

2 cups cornflakcs

1 teaspoon dry mustard

1 teaspoon salt

'4'. teaspoon pepper

ll cup chopped onion

Pinch of ground clove

1 egg

ii cup tomato ketchup

ii cup lightly packed brckn

sugar

l-'.- teaspoon grated orange rind

It tablespoon water

Turn the minced beef into :1 mixing .bowl and l0OF6ll' with a fork: add the bread clumbs and cornflakes: sprinkle with the mus-

tard. salt. pepper ,onion and cloves. Combine lightly but com- pletely.

Beat the egg slightly and add the tomato ketchup: add to meat mixture and again combine lightly.

Tum into a greased casserole or loaf pan (about 4l.-'.- by Elf: inches. top inside measure) and pack lightlv.

Bake in a mndenic oven. 350 degrees. for one hour.

Combine the brown sugar. orange rind and water.

Pour any fat and liquid from the meat: spoon brown sugar mix- ture over meat

Bake loaf V2 hnur longer.

Serve meat loaf from the cas- serole or loaf pan in which it was baked-it is too tender to turn out and slice.
