Ona his return to Ottawa Professor Rob- ertson was waited upon by the special cor- respondent of the Empire. I discovered that we are suffer ing from unfairness of treatment, by the retailers putting our best products before their consuming customers as ‘*best English.” Our Canadian producers do nut get the extra price which is paid by the British consumers by resson of this decep- tion. Not more than two-thirds of $13,000,- 000 of our cheese ia ultimately sold to con- suimers as Canadian, Almost no butcher owns to selling Canadian-fed beef. He says: **Canadian and American beef is sold only in the rough shops, where the cuts are cheap.” Of course, that is untrue and gross- ty unfair alike tothe Canadian and English farmers.

GROWING DEMAND FOR BUTTER.

**I observed a great and growing demand for fresh-made fine butter; the werking elasses—(the multitudinous class who con- sume our products)—are weil enough off to pay fur and buy only foods of fine flavor. They are now willing and able to pay for the exquisites and delicacies in quality, whereas they f rmerly purchased only the necessaries for barely comfortable subsistence. Our cold winter climate gives us an unequalled advantage forthe production and the safe transportation of fancy butter.”

“I learned of an ever-increasing call for Canadian-fed and Canadian cured swine products. I was able to point out the superiority of quality which results from the fattening of swine (as in Canada) on mixed cereals, skim milk buttermilk and whey, over the bacons from Indian corn- fed hog. Our experiments at Ottawa in the feeding of swine upon frozen wheat attracted very earnest attention from the importers of bacon, who recognize in the class of meat which is obtained in that way, the qaslity tor which there is the keenest demind at the high prices in England.
