Seek Markets For Expanded Production

Problems in the preserving of fresh and smoked fish were thor- oushly discussed at lsst night's session of the East Coast Fisheries“ Conference which, like yesterday's two previous sessions, was held in the Cansdlsn Legion Hall.

Mr. T. R. Cieuston, Halifax, pre- sided over the discussion.

Dr. l. A. Beatty, Fisheries Re- search Board, Halifax, said tirat science had discovered no method by which tlsh could be artificially preserved without destroying the flavor. Fish frozen for a short perlod could be landed in Mont- real and sold as fresh fish wl-th- out the average housewife know"- ing the difference, Dr. Beatty said, but frosen fish continued to de- teriorate in food value after tne first few-days. Even if they were kept at s steady temperature of l0 degrees below freezing, they were not fit for food if they re- mained in cold storage for any period longer than six months.

Dr. Bestty ssld s, "tanning" pro- cess set in upon the tissues of any fish subjected to lengthy cold stor- age. The coloration was due, Dr. Bestily said, t6 oxydatlon working on the natural oils of the fish end caused a renclddty which became most disagreeable. Glazing the fish —whloh meant dipping them in water and then subjecting them to a, sub-zero temperature-and wrap- ping them in cellophane wrapping did not prevent deterioration, he said.

There wos always hope that science would eventually find some way of preserving fresh fish in its original condition for sev- eral weeks. That day, however, had not yet arrived, Dr. Beatly said.

Mr. Albert Griffin. fish packer of Montague, said fish could not be shipped from the Province so they would arrive in good condi- tlon in Montreal, Ottawa, or Tor- onto. He did not think most of the persons present were interested m the fresh fish industry and he wished to have the meeting devote more time to the canned lobster business.
