Files Made Of Recipes Hove Proved lnvoluoble

Late one afternoon, there was a knock on my office door. There stood a smiling, buxom woman, with sparkling eyes.

“I'm Mrs. Kurtzman from the pharmacy,” she said. “I thought you might need these items you ordered before the boy could de- liver them tomorrow."

“Do come in.” I insisted. “This is a most unexpected courtesy."

“You've done so much for me, that I am delighted to do some- thing for you." she said.

“The file I've made of your recipes has proved invaluable. First when I was home, bringing up my four boys, and now when I have a job and still keep house for them."

“Just what recipes have you been saving?” I asked.

“The recipes from your news- paper columns, Mrs. Allen. I started collecting them in Michigan about ten years ago.

“At the time, I bought a big

loose leaf scrapbook, separated it,

into divisions, just the way a cook book is divided, and pasted the recipes in the divisions in which they belong. INTERESTING MEALS

“My recipe book is a good friend. It never fails to suggest ways to make our meals more interesting and, at the same time. easy to fix and money-sav- ing.”

Mrs. Kurtman now lives in Farmingdale, Long Island. Her trip to accommodate me. after office hours, must have delayed her home-coming at least an hour and a half. Yes, people are nice!

Tomorrow's Oven Dinner—Hot asparagus on toast. pan roast veal chops, pan roast potatoes- parsnips and onions, citrus fruit layer cake, coffee, tea, milk.

recipes proportioned to serve 4-6

Pan Roast Veal Chops: Rub 6 large veal chops with a mixture of 1.-2 tsp. onion salt, 1 tsp salt, ‘/6 tsp. monosodiuni glutamate and 2 tbsp. pancake flour. Brush with cooking oil.

Brown on both sides in a heavy skillet that can be used in the oven.

Bake 35 min. in a moderate oven, 350 degrees F.

When they are half-done, turn and add ‘/2 c. meat broth or stock

The vegetables: Peel and halve 6 medium-sized white potatoes, 3l medium-sized parsnips and 6 good-sized onions.

Lightly brush a good-sied, low baking dish that can go to table with cooking oil. Arrange the vegetables in it. Spoon over 2 tbsp. salad oil. Dust with salt and pepper.

Bake 35 min. in the oven/with: the veal chops. When half-one, turn the vegetables and add ‘/5 c. meat broth or stock.

Arrange the chops down the centre of a large platter. Border with the vegetables. Garnish with parsley.

Suggestion of the Chef: Instead of starting dinner with a soup or salad, occasionally serve a smal portion of vegetable such as can- ned or frozen asparagus. l

Arrange the hot asparagus neatly on slices of buttered en- riched toast, with ‘crusts re- moved. Pour over the liquid. Top with peppy mayonnaise or with a minced hard-cooked egg with minced parsley.

Mrs. Milton Smith invited mem- bers to her home for next meet- ing. Roll call to be answered pay- ing a penny for each letter of name. Collection 65 cents a con- test was won by Mrs. Ted Crane and Mrs. Edison Drake.

A penny auction was held and $4.20 was added to Institute funds. Mrs. McKenzie served a delicious lunch and meeting adjourned.
